PB& J Greek Yogurt Parfait (Gluten and Dairy Free)

Who doesn’t love an easy morning breakfast?! I know that I do and I also absolutely love saving money! This is an easy greek yogurt parfait that may take a while to make homemade OR I have a hack if you just want to have a quick and easy breakfast.

I went to a restaurant recently, and they were LITERALLY selling this PB & J Parfait for literally $8-10. Why do that when you can make it at home for half the price so let’s talk about the homemade version to make this, then we can go to the easy hacked version!

Homemade Gluten Free Granola

4 cups certified gluten-free oats (rolled or old-fashioned, not instant)

  • 1 cup sliced or slivered almonds

  • 1/3 cup brown sugar, packed

  • 1/4 tsp. salt

  • 1/2 tsp. cinnamon

  • 1/3 cup melted unsalted butter or oil of choice

  • 1/4 cup honey

  • 2 Tbsp. sugar

  • 4 tsp. pure vanilla extract

Preheat oven to 300°.

  1. Line a jelly roll pan (about 10.5"x15.5") with parchment paper, or spray with nonstick cooking spray.

  2. In a large bowl, use a spatula to stir together gluten-free oats, almond pieces, brown sugar, salt, and cinnamon. Set aside.

  3. In a small saucepan over medium heat, combine the butter or oil, honey and sugar. Bring to a simmer over medium heat stirring constantly with a whisk to get the sugar to dissolve and the mixture to come together. Once it comes together and simmers about 30 seconds, remove from heat. Whisk in the pure vanilla extract.

  4. Pour the hot liquid mixture over the oat mixture in the bowl. Stir well with a large spatula or wooden spoon. Spread granola on prepared jelly roll pan. Bake at 300° until golden brown, about 25-30 minutes. Once or twice during the baking time, pull out the pan and stir granola a bit and put back in for the remainder of the baking.

  5. Transfer pan to a rack; If you want to add in dried fruit, add it now. Cool granola completely. If you want smaller chunks, stir several times while it cools so that it doesn't harden into large chunks. If you want to add in mini chocolate chips, add them after it has cooled completely.

  6. When cooled, use your hands to break apart to the size you want and store in an airtight container.

Homemade Blueberry Preserves

  • 2 heaping cups of fresh or frozen blueberries

  • 3/4 cup granulated sugar

  • 1 tablespoon of lemon juice

Add blueberries, sugar, and lemon juice to a medium saucepan.

  1. Stirring frequently, cook over medium high heat until blueberry mixture comes to a rolling boil.

  2. Reduce heat to medium and continue boiling and stirring for 10 minutes.

  3. Towards the end of the cooking time, use the back of the spoon to gently crush some of the berries.

  4. At the end of the 10 minutes the blueberry liquid should be slightly thickened. You can also use a thermometer to judge done-ness. When the blueberry mixture reaches 220°F, the jam is done. (I watched the clock, my jam hit 220°F at almost exactly 10 minutes.)

  5. Transfer the blueberry jam to a storage jar and let come to room temperature.

  6. Once at room temp, seal jars and store in the refrigerator. The jam might take 24 to 48 hours to fully set up. (But it can be eaten immediately.)

  7. For best results use in about 10 days. (If sealed properly and unopened, your jam could last anywhere from 1 to 3 months in the fridge.)

ASSEMBLY

Put your homemade granola at the bottom of a mason jar or see through cup. Add your favorite yogurt. I opt for this dairy free version. Then add a layer of your blueberry jam/preserve ( SO YUMMY HOMEMADE). Add another level of your greek yogurt. then this is the best part- warm up your favorite peanut butter for a little while in the microwave, you’ll thank me later. Then top with your granola and BAM get ready to eat this baby over and over and over.

HACKS

Don’t feel like making your own homemade granola and blueberry preserves or don’t have the time? THAT’s OKAY! Go to the store and buy your favorite jam doesn’t have to be blueberry it can be strawberry too( that tastes JUST as good). You can even buy some granola. Then assemble it. It saves time and it can be a fun versatile breakfast for you and your family!
